Roasted Vegan Cauliflower Soup
Cauliflower is high in fibre and other nutrients, such as B vitamins, which help your metabolism speed up. As it is anti-inflammatory, it is good for digestion, low in calories. It is essential to include it in your regular diet if you're attempting to lose weight ?
Ingredients
- 1 piece Head of cauliflower florets
- 1 Nos Sliced onion
- 1 Nos Garlic head
- 2 tbsp dill leaves or any other fresh herbs
- 2 cups vegetable stock
- 1-2 tbsp olive oil
- Add a little quantity for extra taste. Salt and pepper
Instructions

Mix together caulifower florets, sliced onions, herbs, slat pepper and 1 tbsp olive oil in a baking tray.

Chop the top part of the garlic bulb and place it in a foil, drizzled with olive oil. Cover and place in the centre of baking tray with cauliflower.

Bake all ingredients at 180C for 20 mins, tossing half way.

Remove garlic from the foil and squeeze the pulp.

Add the garlic along with other baked ingredients and grind to a smooth puree along with vegetable stock.

Heat the soup and adjust seasonings. Add lemon to taste.

Serve drizzled with olive oil and fresh herbs.
